Mini Pizzas!

T=tablespoon   t=teaspoon
Ingredients:
1 cup brown lentils
Salt & Pepper
1t cayenne pepper
1t ground cumin
2t ground ginger
2-3 garlic cloves
1 chopped carrot
2 chopped shallots or 1 small onion
1 small can tomato paste or canned tomatoes/sauce
2T milk(soy, almond or cream will work)
Cilantro
Everything else is optional

Directions:
Add lentils and 2 1/2 cup of water to pot and boil on stove top for 10 mins.
Drain lentils and add oil and chopped veggies to pot and sautee for 2 mins on high heat.
Add back into pot lentils and all spices including the tomato paste and butter as well as 1/2cup of water. Mix and cook covered on low heat for 20 mins.
Add milk and cilantro then mix together.  Keep warm til served.

*Notes- If you do not like it as thick of a consistency then add a little more water and milk. Enjoy!

What's Cooking Thursday?

Final recipe before a new month and I wanted to really make it a big one so today I give you a great recipe for homemade breakfast pizza!  Like most people pizza is one of my all time favorite foods because it's so delicious? well yes but it's easily customizable to each and every person and it's really a lot of fun to make as long as you have a few staple ingredients and some spare time.  I will show you the breakfast recipe I used first then the pizza dough recipe that I got mainly from Alton Browns own recipe for easy homemade pizza dough.  I may post a pizza sauce recipe sometime but this time I had half a jar of store bought stuff in my ridge so that's what I used but you could totally find some great recipes for your own sauce online just about anywhere!  If you have never made your very own full sized home made pizza THIS is the one to use enjoy and good luck. Cheaply Simple Homemade Hummus Recipe Less than 5 Minutes

Homemade Garlic Hummus:
1 can of garbanzo beans(rinsed)
1/4 Cup tahini(use 1/2Cup for 2 cans of beans)
1-2 tsp of salt
2 tsp smoked paprika 
1-2 tbs minced garlic(2-4 cloves)
1 tsp cayenne pepper
1 tbs extra virgin olive oil
1 lemon
Add 1/4Cup water until desired texture

Directions:
Blend all ingredients together in a food processor or a blender on low adding water as needed.  
Sprinkle a little bit of paprika and oil on top before serving if you wish.
Feel free to add or subtract depending on your taste as this recipe is highly customizable to fit your tastes.
