Howdy! This community was originally started on TheWiseMatthew Youtube channel. It went better than I expected so I created this blog to expand on different things I enjoy in my life. You folks made my time on Youtube a great experience and I hope to be able to continue that here as well. So this is new and expect some mistakes from me as I try this out. -Matthew

Ingredients:
At least 3 bell peppers(use whatever you'd like here)
Uncooked bite sized chicken
1 small onion
1Tbs chili powder
1tsp smoked paprika
1/2-1tsp cayenne pepper
1tsp ground cumin
1tsp garlic powder(or 2 minced cloves)
1tsp onion powder
1/2tsp salt
Directions:
Pre-heat oven to 400 degrees(F)
Cut up all of your veggies.
Add all seasonings to a small bowl.
Add oil to the bowl and stir until well blended.
Add cut veggies and chicken(or leave out if vegetarian) into baking dish and coat everything with the seasoning mixture.
Bake for 40 minutes stirring halfway through.
Squeeze lime juice or lemon like I had on hand over the dish and top with cheese before serving. HEALTHY & TASTY!

T=tablespoon t=teaspoon
Ingredients:
1 cup brown lentils
Salt & Pepper
1t cayenne pepper
1t ground cumin
2t ground ginger
2-3 garlic cloves
1 chopped carrot
2 chopped shallots or 1 small onion
1 small can tomato paste or canned tomatoes/sauce
2T milk(soy, almond or cream will work)
Cilantro
Everything else is optional
Directions:
Add lentils and 2 1/2 cup of water to pot and boil on stove top for 10 mins.
Drain lentils and add oil and chopped veggies to pot and sautee for 2 mins on high heat.
Add back into pot lentils and all spices including the tomato paste and butter as well as 1/2cup of water. Mix and cook covered on low heat for 20 mins.
Add milk and cilantro then mix together. Keep warm til served.
*Notes- If you do not like it as thick of a consistency then add a little more water and milk. Enjoy!
